Mumbai – The Maharashtra Food and Drug Administration (FDA) has launched the ‘Safe Food, Healthy Maharashtra’ campaign across the State to safeguard consumers’ health. Commissioner Tukaram Mundhe warned that owners of hotels, restaurants and dhabas found violating the prescribed regulations would not be spared.

He further stated that hotel kitchens must comply with the standards laid down by the government administration. “If unhygienic conditions are found in any kitchen, no one will be spared,” he warned.

Mandatory requirements for hotel kitchens as outlined by the Commissioner

1. Walls and floors must be fitted with tiles.

2. The tiles should be washable and impervious to water.

3. Adequate ventilation must be provided.

4. An exhaust fan must be installed.

5. Separate areas should be designated for storing raw materials and for cooking.

6. Raw and cooked food must be stored separately.

7. Vegetarian and non-vegetarian food must be kept separately.

8. Electronic fly traps must be installed.

9. Pest control must be carried out regularly.

10. Food storage areas must be free from insects, cockroaches, lizards and rodents.

11. Drinking water, soap and hand towels should be provided for customers.

12. Clean, safe drinking water must be provided to customers free of charge.
